I’ve been making deep fried pork loin for years. That stuff is awesome!
I keep seeing videos where you mix Wagyu fat with crappy meat and it never works well… Why not mix it properly instead of shoving the meat in there? Like, for example, grind up a brisket into ground pork, separate the pork fat, then grind the wagyu the same way, and mix it sort of like a burger, and then pack it together and cook it like you would a normal brisket – or if you use, for example, a cheap steak, then cook it like a steak instead of a burger?
Doing it that way would give the Wagyu fat a lot more room to actually be useful instead of the rods just crammed into it.
